Job Description

This Sous Chef position leads the culinary team in Retail, Patient, and Catering operations. The Sous Chef is responsible for menu planning & development (FMS), quality control measures (Safety Audits-Safetrax), inventory and requisitions, quality control (Pre-service Meetings/Tray Audits/HACCP Adherence), safety and development of staff, and sanitation of the work environment.

Housing and meals at the worksite will be provided during your rotational shift in Kotzebue. This position may be a 6x2 or 4x2 rotation. The point of hire origin is Anchorage, AK. Travel is accommodated from NANA Region villages to Kotzebue, AK.

Responsibilities

  • Participates in and oversees all culinary production.
  • Menu Planning and Development.
  • Prepares food as indicated by par level sheets and in accordance with Nutritional Services and Health Department standards.
  • Reviews the needs of the day with the supervisor, leads the team through daily tasks, completes production sheets, and verifies supply needs.
  • Ensures quality and quantity control in food production and maintains sanitation standards.
  • Conducts pre-service meetings, facilitates training and coaching, and inputs post-production data in FMS.
  • Supervises and trains food service personnel.
  • Coordinates staff through daily production needs.
  • Oversees cafeteria service, sanitation, and customer service.
  • Manages ordering, receiving, and proper rotation (FIFO).
  • Implements and enforces Food Safety Standards (HACCP).
  • Supports safety programs and follows uniform standards.
  • Assists other food service personnel as needed.
  • Supervises staff and oversees food service areas to ensure proper stocking and cleanliness.
  • Fills in for any food service position as needed.
  • Instructs on proper rotation procedures for produce and dairy.

Qualifications

  • High School diploma or GED.
  • Alaska Food Handlers Card or ServSafe certification within 30 days of hire.
  • Two (2) years of experience as a Sous Chef in a commercial kitchen with supervisory responsibilities.
  • Ability to follow standardized recipes.
  • Proficiency with kitchen equipment such as steam tables, dish machines, knives, ovens, slicers, mixers, grills, fryers, and roasting ovens.
  • Pass a background check complying with relevant laws.
  • Fluent in English.

Preferred Qualifications

  • Three (3) years of direct cook experience.
  • Cafeteria or healthcare kitchen experience.

Working Conditions & Physical Requirements

Indoor environment, moderate noise, high customer interaction, physical activity including walking, standing, lifting up to 50 pounds, no travel required.
