**Second Cooks - (Remote Camp in Alaska)**

**Ketchikan, AK - Seasonal**

MATRIX is looking for an experienced **Second Cook with MSHA** **certificate (** Mine Safety & Health Administration) who is a team oriented, motivated person with attention todetail. You will play a key role at one of our remote exploration camps by supporting the First Cook and/or Kitchen Helper for catering and remote site First Aid duties within a team setting. This position reports to the First cook. * Prepare buffet breakfast with a daily special when site numbers are between 18-35.

* Prepare baked goods and desserts when site numbers are between 18-35.

* Support First Cook and/or Kitchen Helper with food preparation, menus, and grocery orders.

* Order, receive, and organize grocery inventory.

* Practice *first in first out* rotation procedures to ensure food inventory control.

* Participate in a Food Safety Plan using advanced HACCP recording methods.

* Execute safe food storage and labeling of potential food allergy items.

* Perform dish-washing and general housekeeping duties, when needed.

* Participate in daily toolbox meetings.

* Support monthly work-site inspections for kitchen facilities and areas of responsibility.

* Performs tasks according to safe work practices and safe job procedures.

* Notify Camp Manager of any unsafe practices and/or unsafe environments.

* Report all incidents and accidents immediately.

* Practice good housekeeping in the work area at all times.

* Provide coaching and training of all kitchen staff members.

* Actively participate as a high performing, team member.

* Minimum of one (2) year working in a remote camp setting.

* Organizational and problem-solving abilities.

* Solid verbal and written communication skills in English.

* Basic computer skills.

* Highly motivated, team-oriented individual.

* Ability to work a rotation schedule.

* First aid attendants may have to traverse rough terrain such as steep banks, climb over fallen trees or logs, access areas such as excavations or high elevations

* Physical ability to lift and move a minimum of 50 lbs.

* Ability to work and maintain a high level of performance during a 10 - 12-hour shift.
